  • 4 cups wheat flour
  • Cornmeal to taste

Directions

  1. In a bowl, place the warm water, the yeast and mix well;
  2. Place a cloth over it and let it rest for 5 minutes;
  3. In a blender, put the drained corn, the water and beat until it forms a puree and set aside;
  4. In the bowl with the yeast, add the sugar, salt, oil and mix;
  5. Add the corn mash, flour little by little and knead for 5 minutes or until a sticky homogeneous dough is obtained;

Dough ingredients

  • 3 cups wheat flour
  • 3 tablespoons oil
  • 1 1/2 tablespoons dry baking powder
  • 1 tablespoon demerara sugar
  • 1 teaspoon salt
  • 1 tablespoon dehydrated garlic, parsley and onion
  • 1 cup warm water

Ingredients for the filling

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 sliced zucchini
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 2 grated carrots
  • 1/2 cup olives
  • 2 tablespoons parsley greens

Cheese ingredients

  • 2 boiled potatoes
  • 1/2 cup boiling water
  • 2 tablespoons nutritional yeast
  • 1 tablespoon olive oil
  • 1 pinch turmeric
  • Salt to taste

Directions

  1. For the dough, put in a bowl the flour, oil, yeast, sugar, salt, garlic, parsley and onion dehydrated, water and mix everything very well;
  2. Knead on a smooth, clean surface for about 10 minutes;
  3. Place in bowl again, cover with cloth and let rest for 60 minutes;
  4. For the filling, place in the palena the olive oil, onion and saute for 10 minutes;
  5. Add the zucchini, salt, paprika and saute a little more;
  6. Add the carrots, olives, parsley and cook for another 5 minutes. Set aside;
  7. For the cheese, in a blender, place the potatoes and water and blend for 2 minutes;
  8. Add the nutritional yeast, the olive oil and beat for 1 minute;
  9. Transfer the cheese to a saucepan, add the turmeric, adjust the salt and cook for 5 minutes. Set aside;
  10. On a countertop, open the dough to the size of your baking pan, place the filling and cheese;
  11. Roll up, transfer to a greased baking pan, sprinkle flour over top, and let rest for 20 minutes;
  12. Make cuts in the surface of the dough and, if desired, sprinkle tomato sauce over the top;
  13. Bake in preheated oven at 180 degrees for 35 minutes and you’re done!
