1. Healthy coconut cake in the pan

Ingredients

  • 2 eggs
  • ½ cup shredded desiccated coconut
  • 4 tablespoons xylitol
  • ¼ cup coconut milk
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • Unsweetened toasted shredded coconut

Directions

  1. In a bowl place the eggs and the desiccated shredded coconut and stir until the ingredients are incorporated. Then add the xylitol and mix until it forms a paste;
  2. Add the milk and coconut oil and continue stirring. Finally, add the vanilla essence and the yeast and mix everything until you get a homogeneous mass;
  3. Pour the batter into a preheated pan, greased with coconut oil. Cover the pan and let the batter cook over low heat for about 15 to 20 minutes;
  4. Garnish the cake with toasted shredded coconut and enjoy this healthy treat!

2. Healthy oatmeal cake

Ingredients

  • 2 eggs
  • 1 tablespoon melted butter
  • ½ cup skim milk
  • ½ cup demerara sugar
  • 1 cup whole wheat flour
  • 1 tablespoon powdered cinnamon
  • 1 cup coarse flaked oats
  • 1 ½ teaspoon baking powder

Directions

  1. In a bowl beat the two eggs to mix white and yolk. Then add the butter and milk;
  2. Add the demerara sugar, and stir well to dissolve all the clumps;
  3. Add the whole wheat flour and mix until incorporated with the other ingredients. Then add the cinnamon;
  4. Add, finally, the oat flakes and baking powder and mix well;
  5. Pour the batter into a previously greased baking pan and bake in a preheated oven at 200 degrees for about 25 to 30 minutes, or until the toothpick test comes out clean;
  6. Serve as you like!

3. Healthy banana cake with oatmeal

Ingredients

  • 4 ripe bananas
  • 2 eggs
  • 1 cup oatmeal flakes
  • 1 tablespoon baking powder
  • Cinnamon powder to taste
  • 1 tablespoon chia
  • Coconut oil

Directions

  1. Using a mixer or blender, first beat the bananas with the eggs. Then add the oats, baking powder, cinnamon and chia and mix until a creamy paste is obtained;
  2. Grease a baking pan with coconut oil and if desired place some banana slices in the bottom of it to decorate;
  3. Distribute the dough all over the baking pan and bake in a preheated oven at 200 degrees for about 20 minutes, or until the toothpick test comes out clean;
  4. Taste this healthy delight!

4. Healthy orange cake

Ingredients

  • 2 eggs
  • 1 cup sugar
  • ½ cup of oil
  • 1 pinch of salt
  • 1 teaspoon orange zest
  • 400 ml natural orange juice
  • 2 cups rice flour
  • 1 tablespoon baking powder

Directions

  1. In a bowl, place the eggs, sugar and oil, and beat for about 2 minutes, until all ingredients are incorporated;
  2. Then add the salt, zest, orange juice, and rice flour. Mix everything together until a liquid cream is obtained. Finally, add the yeast and stir well;
  3. Pour the batter into a greased baking pan only and bake at 180 degrees for about 30 to 35 minutes, or until the toothpick test is performed and it comes out clean;
  4. Desenforme with the cake still warm, and serve as desired!

5. Healthy lemon cake

Ingredients for the cake

  • 1 egg
  • 3 tablespoons demerara sugar
  • 3 tablespoons melted butter
  • Juice of ½ lemon
  • ⅓ cup oatmeal
  • 1 teaspoon baking powder

Ingredients for the topping

  • 3 tablespoons powdered skim milk
  • Juice of ½ lemon
  • 3 to 4 tablespoons of water
  • zest of the lemon peel

Directions

  1. In a bowl, place the egg, sugar, butter, lemon juice, oat flour and yeast and mix well until smooth;
  2. Transfer the mixture to a small greased baking dish and microwave for about 2 minutes. If you prefer, you can also bake in the oven for about 15 minutes, or until you do the toothpick test and it comes out clean;
  3. For the topping, in a bowl, mix the powdered milk with the lemon juice until it forms a paste, then add the water and stir well until smooth;
  4. Remove the cake from the pan, pour the covering over it and enjoy this marvel!

6. Healthy coconut cake with oatmeal

Ingredients

  • 3 eggs
  • 2 tablespoons butter at room temperature
  • 200ml coconut milk
  • 2 tablespoons demerara sugar
  • 3 tablespoons powdered milk
  • 1 ½ cup oatmeal flakes
  • 1 tablespoon baking powder
  • 500g dried grated coconut

Directions

  1. In a blender, start by beating the eggs, butter, coconut milk and sugar;
  2. Then add the powdered milk, oats, baking powder and coconut. Mix the dough with the pulse function of your machine, so as not to crush the oat flakes;
  3. Pour batter into a greased baking pan and bake in a preheated oven at 180 degrees for approximately 20 minutes or until toothpick test comes out clean;
  4. Unmold with the cake still warm and enjoy!

7. Healthy caramel apple cake

Ingredients

  • 3 eggs
  • ¼ cup sunflower oil
  • ½ cup demerara sugar
  • 2 diced apples
  • 1 cup whole wheat flour
  • 1 teaspoon powdered cinnamon
  • 1 teaspoon baking powder
  • Coconut oil
  • 1 sliced apple

Directions

  1. In a blender beat the eggs, oil and flour until all ingredients are incorporated;
  2. In a bowl, place the flour and cinnamon and mix. Add, little by little, the liquid mixture previously beaten and stir well until a homogeneous mass is obtained;
  3. Add the apples cut into cubes and mix all. Finally add the baking powder;
  4. Grease a baking pan with coconut oil, sprinkle a little demerara sugar and distribute the apple slices on the bottom;
  5. Pour the batter into the pan and, if you like, sprinkle a little more cinnamon on top. Bake in a preheated oven at 180 degrees for about 20 to 25 minutes, or until the toothpick test comes out clean;
  6. Unmold and enjoy!

8. Healthy sweet potato cake

Ingredients

  • ½ cup sunflower oil
  • 3 eggs
  • 100ml coconut milk
  • 1 tablespoon apple cider vinegar
  • 1 pinch of salt
  • 1 teaspoon cinnamon powder
  • 3/2 cup brown sugar
  • 1 cup grated raw sweet potatoes
  • ½ cup rice flour
  • ½ cup sweet cornstarch
  • ½ cup fine flaked oats
  • 2 tablespoons chia seed
  • 1 tablespoon baking powder

Directions

  1. In a blender, beat the oil, eggs, coconut milk, vinegar, salt, cinnamon, brown sugar and sweet potato until smooth;
  2. Add the rice flour, sweet cornmeal and flaked oats to the blender and blend well until the ingredients are fully incorporated;
  3. Finally, add the chia and yeast and mix with the help of a spoon or hand whisk;
  4. Pour the batter into a greased baking pan and bake in a preheated oven at 180 degrees for about 30 minutes, or until the toothpick test comes out clean;
  5. Let the cake cool to unmold and is ready!

9. Healthy carrot cake

Ingredients for the cake

  • 1 medium carrot
  • ½ cup olive oil
  • 2 eggs
  • 4 tablespoons xylitol
  • 1 cup rice flour
  • 1 tablespoon baking powder
  • Coconut oil

Ingredients for the topping

  • 100g melted 70% chocolate
  • ½ box of heavy cream

Directions

  1. In a blender, beat the carrot, oil, eggs and xylitol until smooth. Then, add the rice flour and the yeast, and let it beat for a few more minutes;
  2. Grease a baking dish of your preference with coconut oil and distribute the dough evenly. Bake in a preheated oven at 180 degrees for about 30 minutes;
  3. For the topping, in a bowl, mix the melted chocolate with heavy cream until smooth;
  4. Using an awl, a fork or a knife make small holes in the cake. Then pour the covering over the whole mass;
  5. Serve yourself and enjoy this delicious recipe!

10. Healthy chocolate cake

Ingredients for the cake

  • 4 eggs
  • 1 cup skim milk
  • 2 tablespoons coconut oil
  • 1 cup 100% cocoa
  • 1 cup brown sugar
  • 2 cups oat flour
  • 1 tablespoon baking powder

Ingredients for the topping

  • 200g 70% melted chocolate
  • 1 box of coconut milk
  • Chocolate shavings of your choice

Directions

  1. In a blender, beat for a few minutes the eggs, milk, coconut oil, cocoa and brown sugar. Then, add the oat flour and beat until a homogeneous mixture is obtained. Finally, mix in the yeast;
  2. Grease a baking pan with coconut oil and sprinkle cocoa powder evenly. Pour batter into baking dish and bake in preheated oven at 180 degrees for about 30 minutes;
  3. For the topping, in a bowl, mix the melted chocolate with the coconut milk until smooth;
  4. With the cake at room temperature, pour the ganache over the batter, spreading it with a spoon. If you prefer, with the help of an awl, fork or knife you can make small holes in the dough so that the coverage enters the cake;
  5. Finish with chocolate shavings if desired and enjoy!
