1. Fit and vegan mango ice cream

  1. Peel the mango and cut its flesh into small squares;
  2. Place in a plastic jar and freeze;
  3. Pour the frozen mango into a powerful blender;

  • 1 ripe avocado
  • 1/2 cup unsweetened cocoa
  • 1 teaspoon vanilla essence
  • 1/2 cup sweetener
  • 1 teaspoon instant coffee

  1. Remove the peel of the avocado and cut into pieces;

  5. Place in freezer for at least 4 hours or until hardened;
  6. Transfer the frozen custard to the bowl of a stand mixer;
  7. In the mixer, use a paddle spatula. Beat until creamy and return contents to the aluminum bowl;
  8. Cover with plastic wrap and leave in freezer for at least 2 hours;
  9. Remove from freezer 5 minutes before tasting or serving.

10. Ice cream fit tapioca

Ingredients

  • 100 grams of granulated tapioca
  • 1/2 cup demerara sugar or sweetener
  • 3/4 cup powdered skim milk or powdered coconut milk
  • 400 ml warm skim or vegetable milk
  • 100 ml coconut milk
  • 150 grams of cream or fresh cream

Directions

  1. In a large bowl, place the granulated tapioca, the demerara sugar and the skim milk powder. Mix together;
  2. Add hot milk little by little and mix in with dry ingredients;
  3. Cover with a cloth and let rest for 30 minutes;
  4. Remove the cloth and mix well, preferably with a fouet;
  5. Pour the mixture into a blender and add the coconut milk and cream. Beat for 5 minutes;
  6. Transfer to a jar, cover and leave in freezer for 3 to 4 hours;
  7. Remove from freezer and stir well. Use a mixer and beat for 3 minutes;
  8. Return to freezer and leave overnight;
  9. Serve.
