1. tortillas

Ingredients

  • 250 g wheat flour
  • 1/3 tablespoon salt
  • 1/2 cup warm water
  • 2 and ½ tablespoons vegetable oil

Directions

  1. In a bowl add the flour and salt;
  2. Add the warm water and vegetable oil;
  3. Mix with a spoon, using circular motions in the center of the bowl;
  4. When you can no longer mix with the spoon, use your hands;
  5. Knead gently until it no longer sticks to your hands;
  6. Shape into a ball and cover the dough with a damp cloth;
  7. Let rest for 30 to 60 minutes;
  8. Remove dough from bowl and place on a countertop;
  9. Divide the dough into 8 pieces, as if it were a pizza;
  10. Shape a small ball with each part;
  11. Let rest for 15 to 30 minutes;
  12. Knead the ball into a disk and stretch with a rolling pin;
  13. The discs should be very thin;
  14. Place the dough on a pan and wait until it is filled with bubbles;
  15. Turn and repeat the process on the other side;
  16. Place on a smooth surface, sprinkle water over, and cover with a damp cloth;
  17. Repeat the process with all the discs;
  18. Add the filling of your choice and roll out the dough;

2. Guacamole

Ingredients

  • 2 tomatoes
  • 1 onion
  • 1/2 bunch cilantro
  • 1 avocado
  • Olive oil to taste
  • Salt to taste
  • Juice of 1 lemon
  • Finger pepper

Directions

  1. Chop the tomatoes and onion into cubes;
  2. Chop the cilantro also;
  3. In a bowl, place the avocado and mash with a fork;
  4. Add the tomatoes, onion, olive oil and cilantro;
  5. Season with salt, lime juice, and allspice;
  6. Mix well;
  7. Serve with toast or Doritos and enjoy Mexican food.

3. Mexican Tacos

Ingredients

  • 1/2 cup chopped bacon
  • 1 clove minced garlic
  • 500 g minced meat
  • Spicy paprika to taste
  • Salt to taste
  • Cayenne pepper to taste
  • 1 chopped seedless tomato
  • 1 small green pepper, chopped
  • 1 tablespoon tomato extract
  • Parsley to taste
  • Tortillas for tacos to taste

How to prepare

  1. In a pan, fry the bacon;
  2. Add the garlic;
  3. When browned, add the ground beef and saute until the water dries;
  4. Season with paprika, salt and pepper;
  5. Add the tomatoes, bell pepper, tomato extract and parsley;
  6. Let cook until the water is thoroughly dry;
  7. Stuff the tortillas and serve with whatever accompaniment you desire.

4. Chilli with meat

Ingredients

  • 4 cloves garlic
  • 1 onion
  • 1 green pepper
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin
  • 500 g ground beef
  • Shoyo to taste
  • Finger pepper to taste
  • 2 tablespoons sugar
  • Salt to taste
  • 1 can peeled tomatoes
  • 1 cup water
  • 2 cups cooked black beans without the broth

Directions

  1. Chop the garlic, onion and bell pepper;
  2. In a frying pan, put the vegetable oil and bring to high heat;
  3. When the oil is hot, add the cumin;
  4. Once browned, add the ground beef;
  5. Add the shoyo;
  6. Then add the onion, bell pepper and garlic;
  7. Season with pepper, sugar and salt;
  8. Place the crushed peeled tomatoes over the meat;
  9. Add the water and cook for about 15 minutes;
  10. Add the beans and wait about 6 minutes;
  11. Turn off heat and place in an oven-proof container;
  12. Place the cheddar on top and place in the oven for au gratin;
  13. Taste this amazing Mexican food.

5. Chilli with cheddar

Ingredients

  • 1 cup diced bacon
  • Olive oil to taste
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 450 g ground beef
  • 1 minced smoked calabrian sausage
  • 1/2 green pepper, chopped
  • 1 can of tomato sauce
  • 1 chopped tomato
  • 4 cups cooked cowpeas without the broth
  • 1/2 finely chopped allspice
  • Salt to taste
  • Chives to taste
  • 1 pack of cheddar cheese for sandwich
  • 1/4 cup water

Directions

  1. Put a little olive oil in a pan and wait for it to heat up;
  2. Brown the bacon and set aside;
  3. In the same pan, saute the onion, bell pepper and garlic;
  4. Add the ground beef and sausage;
  5. Season with salt;
  6. Allow to cook for 5 minutes;
  7. Add the tomatoes, beans and tomato sauce;
  8. When the sauce is thoroughly mixed, add the pepper, bacon and spring onion;
  9. Mix lightly and place in a baking dish;
  10. In another pan, add a finger of water and the cheese on top;
  11. Stir until a sauce is obtained;
  12. Pour the cheddar sauce over the chilli and enjoy!

6. Vegan chilli

Ingredients

  • 1 cup kidney beans
  • Water to cover beans
  • 1/2 cup black beans
  • 1 cup cooking water from beans
  • Olive oil to taste
  • 2 cups chopped onion
  • 4 cloves garlic, minced
  • 1 cup chopped carrots
  • 1 cup chopped red and yellow bell peppers
  • Salt to taste
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon dehydrated oregano
  • 1 cup tomato extract
  • 1 pinch of sugar
  • 1 bay leaf
  • 3 tablespoons mustard
  • 1 cup chopped scallions
  • Black pepper to taste

Directions

  1. Place the kidney beans in a bowl of water and soak for 12 hours;
  2. Do the same with the black beans;
  3. Drain the water and cook the beans until tender;
  4. Separate half of the kidney beans;
  5. Place remainder in blender, beat with cooking water for 1 minute and set aside;
  6. In a pan, put the olive oil and saute the onion and garlic;
  7. Add the carrot, bell peppers and saute for 2 minutes;
  8. Season with salt, paprika and oregano;
  9. Saute for 1 more minute and add the red beans separated in step 4 and the black beans;
  10. Add the tomato extract, sugar, bay leaf and whipped beans;
  11. Mix together and simmer for 15 minutes over low heat;
  12. Finish with mustard, green onion, pepper and serve.

7. Fajitas

Ingredients

  • Oil to taste
  • Bacon to taste
  • 150 g smoked calabresa sausage
  • 200 g meat in strips or cubes
  • 200 g chicken breast in strips or cubes
  • 1/2 red bell pepper in strips
  • 1/2 yellow bell pepper in strips
  • 1/2 green bell pepper in strips
  • 1 onion cut into petals
  • 1/2 tablespoon cumin
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon hot paprika
  • 1 teaspoon chili pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon garlic powder
  • 3 tablespoons cilantro
  • Salt to taste
  • 200 ml water

Method of preparation

  1. Heat a frying pan and put a little oil in it;
  2. Saute the bacon and the calabresa;
  3. Remove from skillet and set aside;
  4. In the same pan, saute the meat and set aside;
  5. Repeat the previous step with the chicken;
  6. Put a little more oil in the pan;
  7. Add the bell peppers and saute;
  8. Enter the onion and wait to brown;
  9. Add the meats and season with lemon;
  10. Add the remaining seasonings;
  11. Put in a little water and saute everything until the water dries up;
  12. Taste this delicious Mexican food.

8. Enchiladas

Ingredients

  • 5 chicken breast fillets
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon sweet or smoked paprika
  • 1 teaspoon chili pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • Wheat tortillas to taste
  • 1 can tomato paste
  • 2 tablespoons barbecue
  • Grated cheese to taste

Directions

  1. Season the chicken fillets with salt and pepper;
  2. In a bowl, mix together the paprika, chilies, oregano, and cumin;
  3. Sprinkle a little of the seasoning mixture over the chicken fillets;
  4. Leave the fillets in the refrigerator for about 30 minutes, for the meat to get the seasoning;
  5. Grill the chicken fillets and cut into small strips;
  6. Meanwhile, bathe the tortillas in oil at 180 °C for 10 seconds;
  7. Place the tortillas on a baking sheet and set aside;
  8. In a saucepan, place the tomato extract, barbecue and add 1 teaspoon of the seasoning mix from step 2;
  9. When the sauce has thickened, spoon it into the tortillas, fill with the chicken and roll up;
  10. Place in a baking dish and pour more sauce over the top;
  11. Repeat the previous two steps until the filling is finished;
  12. Sprinkle grated cheese on top;
  13. Bake in the oven at 180 ºC for gratin serve yourself this wonderful Mexican food option.

9. Mexican Burritos

Ingredients

  • 500 g bacon
  • 1 kg ground beef
  • 4 cloves garlic
  • 2 onions, chopped
  • 1 grated carrot
  • 2 chopped red bell peppers
  • 2 chopped tomatoes
  • Black pepper to taste
  • 3 teaspoons salt
  • 1 kg bean paste
  • 1/2 bunch parsley
  • 30 tortillas
  • 30 cherry tomatoes
  • 600 g mozzarella
  • 300 g cabbage

Directions

  1. In a thick-bottomed skillet, put all the bacon;
  2. Turn on heat and brown the bacon;
  3. Add ground beef and saute;
  4. When well sauteed, add the crushed garlic;
  5. Then add the onions, carrots, finger peppers and tomatoes;
  6. Season with black pepper and salt;
  7. Add the bean paste;
  8. Finish the filling with the parsley;
  9. Take tortillas and stuff with mozzarella cheese, 1 tablespoon of the stuffing, 1 cherry tomato cut in four parts and grated cabbage;
  10. Fold the side ends over the filling and roll up like an enchilada;
  11. It will look just like a little bundle;
  12. Repeat the process with all the tortillas;
  13. Heat in microwave and serve the Mexican food.

10. Mexican Paletas

Ingredients

  • 1 box clean strawberries
  • 1 tablespoon icing sugar
  • Juice of 1 lemon
  • 4 180 ml disposable cups
  • 32 50ml disposable cups
  • Paper film
  • 1 can of condensed milk
  • 4 disposable popsicle sticks

Directions

  1. In a blender, beat the strawberries, sugar and lemon juice;
  2. Fill 1/3 of the 180 ml disposable cups with this mixture;
  3. Store leftovers in the refrigerator;
  4. Take the 50 ml cups and make stacks of 8 cups;
  5. Fit each stack into the center of the larger glasses, where the strawberry juice is;
  6. Press the stack of cups until it nears the bottom of the larger cup;
  7. Cover with clingfilm paper, to keep the cups fixed;
  8. Place in freezer for 1 hour;
  9. After one hour, remove from the little cups from inside the larger cups;
  10. Fill the space with condensed milk, leaving about 1 finger free;
  11. Finish with the strawberry juice, up to the rim of the glasses;
  12. Fit toothpick into center of ice cream;
  13. Leave in freezer overnight;
  14. Unmold the paletas and enjoy the Mexican food!
