1. Banana pancake

Banana pancake

  • 2 whole eggs
  • 1 pinch of salt
  • 1 tablespoon oil
  • 2 tablespoons sugar
  • 1 pinch of cinnamon (optional)
  • ½ cup milk
  • 1 cup of wheat flour
  • 1 teaspoon baking powder
  • 1 banana, sliced
  • Oil for greasing the pan

Directions

  1. In a dish, place the eggs, salt and stir;
  2. Then add the oil, sugar, cinnamon, milk and wheat, stirring constantly after each new ingredient;
  3. Add the yeast and mix gently. Set aside;
  4. Peel the banana and cut into slices. Set aside;
  5. In a greased skillet, turn on the heat, let the skillet warm up a little, then lower the heat;
  6. With the aid of a ladle, pour the batter into the pan, let it spread by itself, and add the slices of banana;
  7. Wait to brown on one side, and then turn to brown the other;
  8. Remove the pancake from the pan and serve.

2. Sweet pancake with crispy filling

Ingredients

  • 1 egg
  • 1 tablespoon brown sugar
  • 1 tablespoon coconut oil
  • 3 to 4 tablespoons coconut milk
  • 2 tablespoons peanut (or almond) flour
  • ½ tablespoon baking powder

Directions

  1. Beat the egg, add the sugar and stir again;
  2. Put in the oil and coconut milk and mix well;
  3. Add the peanut flour and lastly the yeast. Stir well;
  4. In a skillet, cook the pancakes over low heat until golden brown on one side;
  5. Turn (carefully so as not to break the batter) to brown on the other side.
  6. Wait for it to cool, fill with peanut cream and serve!

3. Sweet oatmeal pancake

Ingredients

  • 1 egg
  • 1 tablespoon oat bran or quinoa/amaranth flakes
  • 1 tablespoon coconut nectar, agave or honey
  • Drops of vanilla extract (optional)
  • 1 tsp. baking powder

Directions

  1. In a bowl, place: the egg, oat bran, coconut nectar, vanilla extract and baking powder. Mix together;
  2. Heat the pan and grease it so it will not stick;
  3. Pour batter into skillet, bring to low heat, and wait for pancake to cook;
  4. When browned on one side and you feel that the batter is firm, turn (carefully so as not to break) and cook until golden on the other side;
  5. Remove the pancake from the pan and serve with the filling of your choice.

4. Sweet and fit pancake

Ingredients

  • 2 eggs
  • 3 tablespoons milk of your choice
  • 3 tablespoons oat flakes
  • 1 Tbsp. tapioca starch
  • 1 Tbsp. cocoa powder
  • 2 bananas
  • 1 tablespoon peanut butter
  • Strawberries to taste

Directions

  1. In a dish, place the eggs and beat well;
  2. Add the milk, oats, tapioca gum, cocoa powder and stir again;
  3. Pour into a pan greased with coconut oil;
  4. When it is hard, turn the other side and leave until golden brown;
  5. For the filling, mash the bananas, add the peanut paste and mix;
  6. Place the finished pancake on a plate, spread the filling over half of it, slice strawberries to place over the filling, and serve.

5. Dulce de leche pancake

Ingredients

  • 1 tablespoon butter
  • 1 cup wheat
  • 1 cup of milk
  • 3/4 cup water
  • 2 eggs
  • 1 pinch of salt
  • 3 tablespoons sugar
  • Orange zest
  • Vanilla essence
  • Sweet of milk

Directions

  1. Let’s start with a secret for making the perfect pancake: melt the butter in a pan. When it melts, remove the white foam with a spoon;
  2. Carefully remove the fat from the butter that remained in the pan, discarding the milk. Set aside;
  3. For the dough, in a blender, sift the flour and add: the milk, water, and eggs;
  4. Melt the butter in a frying pan, let it cool a little, and add it to the mixture;
  5. Add the salt, sugar, orange zest and vanilla;
  6. Beat the dough in a blender and let it rest, from half an hour to two hours in the refrigerator;
  7. Use the butter we separated at the beginning of the recipe to grease the pan;
  8. Wait for the skillet to heat up, pour in an amount of the batter, and brush a very small amount of butter on the sides of the pancake (this will help with flipping it over);
  9. When browned on one side, with a spatula, turn over and brown the other;
  10. Place an iron skillet or pan to heat over the fire;
  11. Spread the dulce de leche on the pancake, careful not to break it;
  12. Roll it up carefully and sprinkle sugar on top;
  13. Squeeze the iron skillet or pan over the pancake and serve.

6. Chocolate pancake

Ingredients

  • 1 egg
  • ¼ cup of wheat flour
  • ⅓ cup milk
  • 1 tablespoon oil
  • 2 and ½ tablespoons sugar
  • 1 tablespoon cocoa powder

Directions

  1. In a blender, place: the egg, the wheat, the milk, the oil, the sugar and the cocoa powder. Beat for one minute;
  2. Heat the pan well, and when you put your hand near it and it is hot, it indicates that it is at the right point;
  3. Grease the pan with oil;
  4. Pour in ¼ cup of the batter and spread it well, smoothing the corners with a spoon so as not to make it too thin;
  5. When the batter stews completely, turn the pancake over and cook for another thirty seconds;
  6. Remove pancake from pan, use your creativity and fill with ganache, strawberry or banana and serve.

7. Sweet Catupiry Pancake with Guava

Ingredients

  • Catupiry
  • Cinnamon
  • Allspice
  • Guava
  • Lemon zest

Directions

  1. In a cold skillet, put a generous portion of catupiry cheese, spreading well;
  2. On top, place the cinnamon and allspice;
  3. Turn on medium heat and wait five to ten minutes to melt;
  4. After this time it will have given off plenty of fat and will be caramelized. Remove the excess fat;
  5. With the aid of a spatula, gradually work out the sides of the pancake, taking care not to break it;
  6. Keep in pan and fill with: more catupiry, guava paste and lemon zest;
  7. Remove from pan, roll up and serve.

8. Sweet American pancake

Ingredients

  • 1 egg
  • ½ cup milk
  • 2 tablespoons sugar
  • ½ tablespoon salt
  • 1 teaspoon vanilla essence
  • 1 tablespoon oil
  • 1 cup wheat flour
  • 2 teaspoons baking powder
  • Honey to taste
  • Butter

Directions

  1. In a bowl, break the egg and add: the milk, sugar, salt, vanilla essence and oil;
  2. With a fork, mix everything together until homogeneous;
  3. Add flour and stir until incorporated into mixture;
  4. Lastly, add the yeast and stir carefully;
  5. Grease a non-stick pan with butter and leave it on low heat;
  6. With the aid of a ladle, pour a little of the batter into the pan;
  7. Make the pancake very round, small and thick, because the American pancakes are different from the traditional ones;
  8. When the dough is balled up, turn and brown the other side;
  9. When both sides are browned, remove the pancake from the pan and serve by placing honey and a small square of butter on top.

9. American pancake with Nutella

Ingredients

  • 30 g sugar
  • 1 teaspoon molasses
  • 2 eggs
  • 110 g wheat flour
  • ½ teaspoon baking soda
  • 50 ml milk
  • Banana to taste
  • Nutella to taste

Directions

  1. Use a scale to use the correct quantities, and in a bowl place: the sugar, molasses, eggs (break into a separate container to check they are not spoiled) and mix;
  2. Sift the flour and baking soda and add to the mixture;
  3. Finish by adding the milk and whisk until smooth;
  4. Let dough rest for 15 minutes to make it smooth;
  5. Slice the bananas into rounds and, in a hot non-stick pan, place a portion of the batter (use a ladle to help with the measurement);
  6. Let the dough cook and brown well, until bubbles form. When they begin to burst, turn the dough over;
  7. Let it brown a little and remove the pancake from the pan;
  8. Make the remaining pancakes;
  9. Place a generous portion of nutella on top of a pancake and add the banana slices;
  10. Add another pancake on top, forming a « sandwich ». With a knife, cut in half and serve.

10. American pancake stuffed with dulce de leche

Ingredients

  • 2 eggs
  • 3 tablespoons sugar
  • Essence or vanilla extract
  • Pinch of salt
  • 1 cup milk
  • 4 tablespoons oil
  • 3 cups of flour
  • 1 tablespoon baking powder
  • 1 tablespoon hazelnut cream
  • 1 tablespoon dulce de leche

Directions

  1. In a bowl, add the eggs and beat for two minutes;
  2. Add the sugar, vanilla essence and salt. Mix together;
  3. Add the milk and oil and mix. While mixing, add the wheat and stir again;
  4. Lastly, add the yeast and mix thoroughly;
  5. Grease a frying-pan with a little oil, and leave it on a low fire;
  6. Add two tablespoonfuls of the batter, spread with a spoon (forming a circle) and add the hazelnut cream, spreading it well over the batter;
  7. Add two tablespoonfuls of the dough on top of the hazelnut cream, covering all the cream;
  8. When it begins to brown on one side, turn and brown the other;
  9. Remove the pancake from the pan and make another in the same format as the previous one, but filling with dulce de leche;
  10. When it starts to brown on one side, turn over and let it brown on the other;
  11. Remove the pancake from the pan and serve.
