500g of Venturelli wheat semolina;
120g of manilha or margarine;
3 whole eggs;
3/4 cup of sugar;
1/2 cup of grated coconut, can be fresh or dry;
1 spoon of baking powder;
To water the cake:
1/2 cup of water;
1/2 cup of sugar;
Method of preparation
In a bowl, place the margarine (or butter) and sugar.
Beat until very white and then add the eggs.
Beat some more, and add the grated coconut and the Venturelli semolina.
Add the baking powder and mix. The dough will get really hard, don’t worry.
Now, in a greased form (you can grease with the semolina itself) and floured, place your dough.
Now, take the cake to bake. This cake should take 30-35min in a 180º oven!
While the cake is baking, pour half a cup of sugar, half a cup of water and squeeze the lemon into a saucepan and bring to a boil.
After boiling, wait 2 minutes and your syrup will be ready.
Cut the semolina cake into small squares and, with the help of a spoon, wet your cake with the syrup!
Venturelli Tip: It is very important to water your cake so it doesn’t get dry.
