  • 4 medium bananas
  • 2 eggs

  • 1/3 cup brown sugar
  • 1 cup oat flour
  • 1/3 cup cornstarch

  1. Grease a medium-size baking pan with oil and sprinkle rice flour. Set aside;
  2. Preheat oven to 180 degrees;
  3. Peel the bananas and place in a bowl. Mash well. Keep 250 grams or 1 cup of the mashed banana in the bowl;
  4. Add the eggs, lemon juice, cinnamon and salt. Mix with a fork until smooth;
  5. Insert the oil and sugar. Stir again;
  6. Add the oat flour and cornstarch. Mix until it becomes a homogeneous dough;
  7. Sprinkle a little rice flour or cornstarch on the raisins. Insert into the dough;
  8. Add the yeast and stir quickly;
  9. Pour the batter into the greased baking pan;
  10. Bake in preheated oven at 180 degrees for about 25 minutes. Do the toothpick test and see if it comes out dry;
  11. Remove the cake from the oven and wait for it to cool completely. Unmold;
  12. Taste and then keep stored in the refrigerator.

7. Banana cake with oatmeal and apple

Ingredients

  • 1 and ½ cups oat flour
  • ¾ cup cornstarch
  • ¼ cup rice flour
  • 3 eggs
  • 1 cup ripe bananas
  • 2 cups chopped apple into small cubes with peel
  • ½ cup oil
  • ½ cup brown sugar
  • 1 pinch of salt
  • 1 teaspoon cinnamon powder
  • 1 pinch of nutmeg
  • zest and juice of 1 lemon
  • ¼ cup raisins
  • 1 tablespoon rice flour
  • 1 tablespoon baking powder

Directions

  1. Grease a medium-size baking pan with oil and sprinkle rice flour. Set aside;
  2. Let the oven preheat to 180 degrees;
  3. In a large bowl, mix together the oat flour, cornstarch and rice flour. Set aside;
  4. In a blender, place the eggs, banana, 1 cup apples, oil, brown sugar, salt, cinnamon powder, nutmeg, zest and lemon juice. Beat until the dough is smooth and homogeneous;
  5. Pour the batter from the blender into the bowl with the dry ingredient mix. Mix well until everything is incorporated;
  6. In another bowl, mix together 1 cup chopped apple, the raisins, and 1 tablespoon rice flour. Insert this mixture into the bowl with the dough;
  7. Lastly, add the baking powder and mix gently;
  8. Pour the batter into the greased baking pan;
  9. Then bake in the oven for 30 minutes at a temperature of 180 degrees;
  10. Remove from oven, allow to cool and unmold;
  11. Now just eat. Keep in the refrigerator to last longer.

8. Banana cake with oatmeal and chocolate

Ingredients

  • 1 cup mashed ripe bananas
  • 3 eggs
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon vanilla essence
  • 1 pinch of salt
  • 1/2 cup brown sugar
  • 1/3 cup oil
  • 1 cup oatmeal
  • 1/3 cup sweet cornstarch
  • ¼ cup 100% cocoa
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • ⅓ cup chocolate drops or chopped 70% chocolate

Directions

  1. Preheat oven to 180 degrees;
  2. Use oil to grease a medium baking pan with a hole in the center. Sprinkle a little cocoa with a sieve. Set aside;
  3. Place the peeled bananas in a large bowl and mash well with a fork. Keep 1 cup of mashed bananas in the bowl and reserve the rest for another time;
  4. Add the eggs, apple cider vinegar, vanilla essence and salt. Stir well until everything is incorporated;
  5. Insert the sugar and stir again;
  6. Add the oil and mix;
  7. Add the oat flour and stir until incorporated into the batter;
  8. Insert the sour tapioca powder and mix;
  9. Sift the cocoa powder over the batter. Mix until smooth;
  10. Add the sifted baking soda and baking powder. Stir quickly;
  11. Add the chocolate drops and stir one last time;
  12. Transfer the dough to the greased baking pan;
  13. Bake in preheated oven at 180 for approximately 25 minutes;
  14. It’s ready!

9. Caramelized banana cake with oats

  • 4 eggs
  • 1/3 cup coconut oil
  • 8 medium bananas
  • 1 tablespoon coconut or brown sugar
  • Cinnamon to taste
  • 2 cups oat flakes
  • 2 level tablespoons baking powder

Directions

  1. Insert eggs, oil and 4 chopped bananas into blender. Crush;
  2. Add the sugar, cinnamon, and oats. Whisk until smooth;

Ingredients

  • 4 ripe bananas
  • 2 eggs
  • 1 cup oat flakes
  • 1 tablespoon baking powder
  • Cinnamon powder to taste
  • 1 tablespoon chia seeds

Directions

  1. Roughly chop the bananas and place in a bowl with the eggs;
  2. With a mixer, knead and mix the two ingredients. The dough should be smooth and homogeneous;
  3. Add the oat flakes and mix with the mixer again;
  4. Insert the yeast and whisk;
  5. Add the cinnamon powder and chia seeds. Turn the mixer on once more;
  6. Grease a baking pan;
