Ingredients
1 tablespoon of Famiglia Venturelli wheat flour
1 tablespoon of skimmed milk powder
2 tablespoons of powdered sweetener, suitable for stove and oven
2 tablespoons of unsweetened cocoa
3 whites
1 pinch of salt
For the filling:
1 can of pineapple in diet syrup
½ cup of diet cherry jam
2 tablespoons of powdered sweetener
150g non-fat white cheese
Cinnamon powder for sprinkling
Powdered sweetener for sprinkling
Method of preparation
In a bowl, place the egg whites and a pinch of salt. Beat with mixer on high speed. When it forms a foam, add the sweetener and continue beating until you get a firm meringue.
In another bowl, mix together dry ingredients (powdered milk, cocoa and flour). Sift them twice so that the curl is spongy. Then, mix with the egg whites preparation, and stir with a wire whisk, making gentle movements, gently blending.
Now line a medium baking sheet with parchment paper, grease it with vegetable oil and pour in the dough, using a spatula to spread it out well. Bake in a hot oven for 8 minutes. Then unmold onto a cloth that has been sprinkled with sweetener. Remove the paper with the help of a knife.
Beat the white cheese with the sweetener, add 4 slices of pineapple, chopped and drained.
Cut the ends of the dough into a cut so it doesn’t break when rolling. Apply a layer of cherry jam, add the pineapple cream at one end and spread well.
Wrap it with the help of a cloth and press it lightly with your hands to distribute the filling evenly. Transport the rolled onto a platter. Before serving, decorate it by sprinkling the entire surface with cinnamon and powdered sweetener.
