1. Broccoli au gratin with cauliflower
Ingredients
- 1 tablespoon oil;
- 1 tablespoon butter;
- 3 cloves garlic;
- 1 chopped onion;
- 4 tablespoons chives;
- 1 peppercorns;
- Half of a head of broccoli;
- Half of a head of cauliflower;
- 1 sachet of salad sazon or 1 shallow dessert spoonful of salt;
- 1 teaspoon oregano;
- 1 dessertspoon vinaigrette seasoning;
- 1 teaspoon oregano;
- 2 tablespoons cornstarch;
- 300ml milk;
- 1 carton of heavy cream;
- Grated cheese.
Directions
- In a medium saucepan over medium heat, add the oil, butter and garlic;
- When garlic begins to fry, include the onion, green onion and chili pepper;
- Saute the ingredients and include the broccoli and cauliflower;
- Include a sachet of salad sazon or 1 shallow dessert spoon of salt;
- Next, add the seasonings, oregano, and vinaigrette. Saute and cover the pan for 2 minutes over medium heat;
- Drag the mixture to one corner of the pan and add the 2 tablespoons of cornstarch and the 300ml of milk. Keep mixing until the joint begins to thicken slightly, then mix all the ingredients together;
- Add the heavy cream and mix until you find a creamy texture;
- Include the grated cheese on top of the mixture and place in the oven for 10 to 15 minutes to gratin;
- Your broccoli and cauliflower gratin is ready!
2. Broccoli au gratin with vegetables
Ingredients
- 800 grams of broccoli
- 1 liter of water
- 1 teaspoon of salt
- 2 tablespoons milk;
- 1 tablespoon olive oil
- 1 onion, chopped
- ½ chopped green pepper
- ½ yellow pepper, chopped
- 3 eggs
- 400ml milk
- 5 tablespoons oil
- 1 and ½ teaspoon baking powder
- 6 tablespoons wheat
- parsley to taste
- Mozzarella
Directions
- In a bowl add the water, a tablespoon of salt, two tablespoons of milk and the chopped broccoli. Cook until al dente, drain and set aside;
- In a frying pan, include the olive oil, onion and green and yellow peppers. Sauté well and set aside;
- On a platter, place all the broccoli and the vegetable stew;
- In a bowl, beat the 3 eggs, add a shallow spoonful of salt, 400ml of milk, 5 spoons of oil, 1 and ½ spoons of baking powder and the 6 spoons of wheat. Add parsley to taste and mix well;
- Pour the previous sauce into the dish with broccoli and vegetables, sprinkle mozzarella and bake in the oven until gratin;
- Your broccoli and vegetable gratin is ready!
3. Broccoli au gratin with sour cream
Ingredients
- 1 cube of butter
- ½ onion, minced
- 2 cloves minced garlic
- Ham
- Cream of milk
- Nutmeg
- Peppercorns
- Salt
- Boiled broccoli
- Cheese
- Oregano
Directions
- In a pan, add the butter, onion and garlic;
- Saute the ingredients well, then include the ham and continue sauteing;
- Include the cream, mix well and add the nutmeg, white pepper, salt (all to taste) and saute for a little longer;
- On a platter, include the cooked broccoli and pour the sauce over all the broccoli, add the cheese on top and oregano;

Ingredients
- 1 broccoli
- 2 eggs
- Black pepper

- 4 tablespoons heavy cream
- 1 cup milk

- On a platter, place all the cooked broccoli, sprinkle the salt, black pepper, fried garlic and olive oil. Mix well;
- Top the broccoli with ricotta cheese and add the slices of mozzarella. Bake in the oven at 180°C for about 20 minutes;

Ingredients
- 150 grams of bacon (optional)
- 1 boiled broccoli
- 2 tablespoons margarine
- ½ chopped onion
- Salt and pepper to taste
- 2 tablespoons of wheat flour
- 2 cups warm milk
- ½ cup cream cheese
Directions
- In a pan to heat, fry the bacon and set it aside;
- In another pan to the fire, add the butter, the chopped onion and season with salt and black pepper to your taste, stirring the ingredients for 1 minute;
- Add the flour, mix well, and then include the milk, mixing until thickened;
- After the sauce has thickened, turn off the fire, add the ricotta cheese and mix well;
- In a baking dish, place the broccoli, sprinkle the bacon and spread the sauce on top;
- Bake in preheated oven for 20 minutes at 200 degrees;

7. Creamy broccoli gratin with calabresa
Ingredients
- 1 tablespoon margarine
- 2 tablespoons wheat flour
- 2 cups milk;
- 1 dessert spoon oregano
- 1 dessertspoon sweet paprika
- 2 tablespoons ricotta cheese
- ½ box heavy cream
- Broccoli, boiled
- Grated Calabrian sausage
- Cheese
Directions
- Dissolve the margarine in a pan and add the flour, mixing well until it forms a paste;
- Add the milk and stir well until the sauce thickens;
- Season with oregano and sweet paprika;
- Add the ricotta cheese mixing it well, turn off the heat and include half the carton of heavy cream. Stir it all very well;
- In a dish place a little sauce, the broccoli cooked and cover with the rest of the sauce;
- Place the cheese on top, the grated Calabrian sausage and a pinch of oregano;
- Bake for 25 minutes and you’re done!
8. Broccoli au gratin with white sauce
Ingredients
- 2 small boiled broccoli;
- 2 tablespoons olive oil;
- ½ tablespoon minced garlic;
- Salt and black pepper to taste;
- Cheese;
- White sauce;
- Grated parmesan cheese.
Directions
- Clean, cook and set aside the broccoli;
- In a pan on the fire, add the olive oil, minced garlic mixing well the ingredients and include the broccoli with the black pepper and salt.
- After sauteing well, place the broccoli in a baking dish and add the pieces of cheese rolled in the middle of the broccoli;
- Spread the white sauce well on top and sprinkle grated parmesan;
- Bake in the oven at 200 degrees and you’re done!
9. Broccoli au gratin with potatoes
Ingredients
- 1 boiled broccoli
- 6 sliced potatoes
- 3 tablespoons margarine
- 3 tablespoons wheat flour
- 500ml milk
- Salt to taste
- Black pepper to taste
- 1 box heavy cream
- 200 grams of mozzarella
- Oregano (optional)
Directions
- After cooking the broccoli and potatoes in salted water, dissolve the margarine in a pan and add the flour, sautéing well;
- Gradually add the milk and mix until the flour is dissolved. Season with salt and black pepper to taste, and then mix until the sauce thickens;
- Turn off the fire and add the cream and mix;
- Place the potatoes with the broccoli in a baking dish and spread the sauce on top;
- Spread the mozzarella over the sauce, sprinkle oregano and bake in a 180 degree oven until gratin.
10. Broccoli au gratin with chicken
Ingredients
- ½ kg chicken fillet
- 2 cloves minced garlic
- 1 teaspoon salt
- 1 pinch of black pepper
- Juice of half a lemon
- 3 tablespoons oil
- 1 tablespoon butter
- 300 grams of broccoli washed and chopped
- ½ onion, chopped
- Marinade Sauce
- ¼ of chopped red bell pepper
- 2 chopped seedless tomatoes
- Black pepper and sweet paprika to taste
- 1 pinch of turmeric
- 1 teaspoon paprika
- 2 boxes heavy cream
- 100 grams of mozzarella
Directions
- In a bowl, season the chicken with garlic, salt, black pepper, and the juice of half a lemon. Let it marinate for 15 to 20 minutes to get the seasoning right;
- In a pan heat add the oil and brown all the chicken fillets and place them in a baking dish;
- In the same pan in which you browned the chicken, melt the butter, saute the broccoli and add salt to taste;
- Let it saute with the pan covered for 2 minutes and add the onion stirring it until browned. Then include the marinade sauce, red pepper, tomato and continue mixing;
- If necessary, add more salt to taste;
- Season with black pepper, sweet paprika, turmeric and paprika;
- Saute well, add the cream and check the salt. If necessary, add more salt and let the sauce cook until it comes to a boil;
- Turn off the fire, cover the chicken fillets with the sauce and place the cheese on top;
- Bake in the oven for 20 to 25 minutes and it will be ready.
