The banana cuca is very similar to the traditional board cake of German cuisine, but the Brazilian cuca does not take the streusel topping used by them. 1. Banana Cake simple

Ingredients

  • 1 and 3/4 cup sugar
  • 2 and 1/2 cup (200 ml) flour
  • 8 to 10 ripe bananas
  • 250g margarine
  • 1 cup milk
  • 1 tablespoon baking powder

Directions

  1. In a bowl place the sugar, flour, yeast and mix;
  2. Add the margarine and mix with your hand until it forms a fluffy mixture;
  3. Grease a round baking pan with margarine and flour, and pour in a little of the farofa;
  4. Then slice the bananas into three pieces and place them on top;
  5. Pour on a little more farofa and make another layer of bananas;
  6. After finishing the last layer of bananas, add the milk on top and finish with the rest of the farofa;
  7. If desired, you may sprinkle a little cinnamon;
  8. Now, just bake in the oven 180 °C within 45 minutes to an hour;
  9. After baked, just unmold and enjoy.

2. Banana Cake with salt

Ingredients

  • 2 eggs
  • 2 cups sugar
  • 1 large spoonful of margarine
  • 4 cups of flour
  • 1 cup milk
  • 1 tablespoon baking powder
  • 6 bananas
  • 1 pinch of salt

Ingredients of the farofa

  • 1 cup of wheat flour
  • 1 cup of sugar
  • 1 teaspoon margarine
  • cinnamon to taste

Directions

  1. In the mixer, add the eggs and sugar and beat;
  2. Add the margarine, flour, salt, and milk and beat again;
  3. After this, put in the yeast and let it beat a little more;
  4. Then pour the dough into a greased and floured form, spread it over the whole form, and set aside;
  5. In the same bowl as the mixer add the ingredients for the farofa and stir;
  6. Peel the bananas into strips and place them on top of the reserved batter;
  7. Throw the farofa on top and bake in the oven for about 40 minutes or until golden brown.

3. Banana Cuva with Coconut

Ingredients

  • 20 tablespoons of wheat flour
  • 20 tablespoons sugar
  • 14 tablespoons of well chilled butter or margarine
  • 1 pinch of salt
  • 1 level teaspoon baking powder
  • 1 package (100 gr) grated coconut
  • 7 ripe bananas
  • 3 eggs
  • ½ cup milk

Directions

  1. In a bowl, add the flour, sugar, butter, salt, baking powder and grated coconut;
  2. Stir the ingredients together with your hands until it forms a fluffy mixture, and set aside;
  3. Then slice the bananas into three parts;
  4. Grease a round pan with margarine and sprinkle with flour;
  5. Line the bottom of the pan with a little of the farofa, add a layer of banana, and then a little cinnamon powder;
  6. Repeat the same process until finished with the last layer of farofa;
  7. After this, break the eggs into a bowl, add the milk, and beat well;
  8. Open small holes in the dough and add this mixture gradually by spreading it out;
  9. To finish, sprinkle with a little cinnamon powder and bake in a preheated oven at 180 °C for 40 minutes or until golden brown.

4. Banana Cake with farofa

Dough ingredients

  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1 and 1/2 tablespoon margarine
  • 1 and 1/2 cup (200 ml) flour
  • 1/2 tablespoon baking powder
  • 5 bananas about

Ingredients for the farofa

  • 3/4 cup flour
  • 1/2 cup sugar
  • Cinnamon to taste
  • 3 tablespoons shallow margarine

Directions

  1. In a bowl, place the eggs, sugar and mix well;
  2. Add the milk and margarine, and then stir again;
  3. Add the wheat flour gradually, continue stirring until a homogeneous mass is obtained;
  4. Add yeast and pour all the dough into greased baking pan;
  5. Slice the bananas into strips, place them on top of the batter and set aside;
  6. To make the farofa, place in a bowl the flour, sugar, cinnamon, and margarine, and stir by hand;
  7. After ready, pour the farofa over the dough and bake in a preheated oven at 180 °C for about 35 minutes;
  8. Ready, your recipe will already be in the point to be served.

5. Banana Cake with Vanilla

Farofa Ingredients

  • 1 tablespoon butter
  • ½ cup sugar
  • ½ cup flour
  • 2 teaspoon powdered cinnamon
    • Dough ingredients

      • 2 tablespoons butter
      • 1 cup sugar
      • 2 eggs
      • 1 dessertspoon vanilla essence
      • ½ cup milk
      • 2 cups wheat flour
      • 1 tablespoon yeast
      • 3 chopped ripe bananas

      Directions

  1. Start with the preparation of the farofa: in a bowl mix all the ingredients with your hand until it forms a farofa and set aside;
  2. To prepare the dough put in a mixer, the butter, sugar and beat for 2 minutes;
  3. Add the eggs and beat again for 2 minutes;
  4. Then add the vanilla essence, milk, sifted flour, baking powder and beat for 1 minute;
  5. Pour the batter into a greased and floured pan;
  6. Chop the bananas into slices, place them on top of the dough, and cover with the farofa;
  7. Finally, bake in a preheated oven at 180 °C for about 30 minutes.
  8. Now just enjoy this delight.

6. Creamy banana muffin

Cream ingredients

  • 1 box (395 grams) condensed milk
  • 3 tablespoons cornstarch
  • 1/2 quart milk
  • 1 carton (200 grams) heavy cream

Ingredients for the farofa

  • 1 cup (240 ml) of wheat flour
  • 1 cup (240 ml) of sugar
  • Cinnamon powder to taste
  • 3 tablespoons margarine or butter

Dough ingredients

  • 10 ripe bananas
  • 4 whole eggs
  • 2 cups (240 ml each) sugar
  • 2 tablespoons margarine or butter
  • 3 cups (240 ml each) wheat flour
  • 1 cup (240 ml) of milk
  • 1 tablespoon baking powder

Directions

  1. Start by preparing the cream: in a pan place the condensed milk, the cornstarch and stir well;
  2. Add the milk, turn on the fire and stir until thickened;
  3. Turn off heat, pour in heavy cream, mix well and let cool;
  4. To prepare the farofa: put in a bowl, the flour, sugar, cinnamon and butter. Stir with your hand until you get the point of farofa and set aside;
  5. Turn on the fire and preheat to 180 °C for about 15 minutes;
  6. Slice the bananas and set aside;
  7. To prepare the dough: in a mixer put the eggs and sugar and beat well;
  8. Add the margarine, the sifted flour, the milk, and beat until the dough is very smooth;
  9. After that, add the baking powder and mix;
  10. In a greased and floured pan, pour the batter and place the bananas;
  11. Place the cream, spread the farofa on top, and bake for about 55 minutes;
  12. Let cool and cut.

7. Banana Cake with dulce de leche

Farofa Ingredients

  • 1 and ½ cup of wheat flour
  • 1 and ½ cup sugar
  • 4 tablespoons chilled butter or margarine

Dough ingredients

  • 3 eggs
  • 1 and ½ cup brown sugar
  • 3 tablespoons butter
  • 1 cup room temperature milk
  • 2 cups wheat flour
  • 1 tablespoon baking powder

Ingredients for assembly

  • 8 bananas split in half
  • Juice of half a lemon
  • 500 gr dulce de leche

Directions

  1. Start by preparing the farofa: in a bowl mix the flour, sugar and butter;
  2. Stir by hand until it forms a fluffy mixture and set aside;
  3. To prepare the dough: put in a bowl the eggs, sugar and mix very well;
  4. After that, beat the mixture for about 1 minute;
  5. Add the butter and mix a little more;
  6. Then add the milk, the sifted flour, and stir until a homogeneous mass is obtained;
  7. Add the baking powder and mix lightly;
  8. Pour batter into greased and floured pan spreading it all over the pan;
  9. Cut the bananas in half and squeeze the lemon over them;
  10. Then place them on the pastry and, with a piping bag, add the dulce de leche;
  11. Finally, cover all with the farofa and bake in a preheated oven at 180 °C for about 1 hour;
  12. After it is ready just unmold and delight.

8. Banana Cake vegan and gluten free

Farofa Ingredients

  • 1/4 cup rice flour
  • 1/4 cup brown sugar
  • 1 pinch cinnamon
  • 1 tablespoon coconut oil

Dough ingredients

  • 3 plantains or 6 plantains
  • 2 tablespoons olive oil
  • 1 tablespoon sweet cornstarch
  • 1/2 cup demerara sugar
  • 1 and 1/4 cups water
  • 1 and 1/2 cups rice flour;
  • 1 pinch cinnamon
  • 1 dessert spoon of baking powder

Directions

  1. Start by preparing the farofa: in a bowl place the rice flour, brown sugar, cinnamon, coconut and mix with your hands;
  2. Wet your fingertips with water and mix the ingredients until you get the consistency of a farofa and set aside;
  3. To prepare the dough: in a bowl mash the bananas, add the olive oil and mix well;
  4. Then mix the sweet cornmeal, demerara sugar, water and mix well;
  5. Add the rice flour, cinnamon and stir again;
  6. Then mix in the chemical yeast;
  7. Pour the batter into a greased baking pan and make a layer with the sliced bananas;
  8. Finally, sprinkle all the farofa on top and bake in a preheated oven at 180 °C for 40 minutes;
  9. After it is ready, just unmold this delight and enjoy.

9. Banana Cake vegan sugar free

Ingredients

  • 8 ripe bananas
  • 1/2 cup oil
  • 1 tablespoon baking powder
  • 4 tablespoons rice flour
  • 1 pinch of cinnamon
  • 1 pinch of nutmeg

Ingredients for the farofa

  • 1 cup rice flour
  • 3 tablespoons xylitol
  • 1 pinch of cinnamon
  • 1 tablespoon coconut oil

Directions

  1. In a bowl, slice the bananas, add the oil, baking powder, rice flour, cinnamon and nutmeg;
  2. Stir all the ingredients together with your hand and press the bananas to incorporate them into the batter;
  3. Place this mixture on a greased baking sheet and set aside;
  4. To prepare the farofa: add in a bowl the rice flour, xylitol, cinnamon and coconut oil;
  5. Stir with your hand until it has the consistency of a farofa and pour over the dough;
  6. Then bake in a 180 °C to 200 °C oven for about 30 minutes or until golden brown;
  7. Ready, now just delight yourself.

10. Banana Cake fit

Ingredients

  • 3 eggs
  • 1 and 1/2 cup brown sugar
  • 1 tablespoon vanilla essence
  • 1/2 cup skim milk
  • 1/2 cup coconut oil
  • 2 cups rice flour
  • 1 tablespoon baking powder
  • 3 sliced bananas

Ingredients for the farofa

  • 3 tablespoons powdered skim milk
  • 4 tablespoons oatmeal
  • 3 tablespoons demerara sugar
  • 1 tablespoon cinnamon powder
  • 2 tablespoons coconut oil

Directions

  1. In a bowl place the eggs, brown sugar, vanilla, milk, coconut oil and beat with a pan;
  2. Then add the rice flour, baking powder and mix gently;
  3. Grease a baking pan with coconut oil and rice flour;
  4. Pour the batter, place the banana slices on top and set aside;
  5. To make the farofa: put all ingredients in a bowl and mix well until you get the point of farofa;
  6. Then sprinkle the dough and bake in a preheated oven at 180 °C for about 30 minutes;
  7. Now just enjoy this delicious fit.
