Ingredients

Pasta (serves 2 people)
200 g of wheat flour Venturelli Family;
2 eggs;
1 tablespoon of oil;
salt to taste;

Filling
1 cup of crisp fried bacon (in cubes);
1 cup of coarse grated mozzarella;
finely chopped parsley, to taste;

Method of preparation

In a bowl, add the flour and open a hole in the middle.

Add the salt, lightly beaten eggs and oil. Mix well.

Knead with your hands until the dough is smooth, homogeneous and without sticking.

Cover the dough with plastic wrap or a dish towel. Let it sit for 30 minutes for it to grow.

Then sprinkle a surface with flour and place the dough. Stretch it out with the help of a roller.

Venturelli Tip: Try to leave the dough very thin, because it makes the capeletti more delicious and less heavy on the stomach!

Now cut the dough into small circles. They can be made with a metal cutter or a cup. If using the cup, flour the top so it doesn’t stick.

Add the filling to the center of the batters. Now just close it like a pastel, folding it into a half moon shape. After that, bring the ends together, pressing them to stick together.

Venturelli essential tip: as the dough is floured, the best thing to do is to pass a little water on the ends and tips, with your finger or a brush. Thus, it will stick easily, preventing the dough from opening while it cooks.

Cook the capelletis in boiling water. When they start to float, leave it for another two minutes and it’s ready.

Drain the capelettis and serve with whatever sauce you prefer!
