1. Vegan coffee cake in the pan

Ingredients

  • 10 tablespoons millet flour or cornmeal
  • 2 tablespoons 100% cocoa powder
  • 2 ½ tablespoons brown sugar
  • 1 teaspoon psyllium
  • 9 teaspoons strained coffee
  • 1 teaspoon olive oil

Directions

  1. In a bowl, place the millet flour, the cocoa powder and the brown sugar. Mix these dry ingredients together and set aside;
  2. In another bowl, place the psyllium and 3 tablespoons of strained coffee. Stir well and set aside until it becomes a gel consistency;
  3. Take the dry mix, open a hole in the middle and add the olive oil, the remaining strained coffee and the gel formed with the psyllium;
  4. Stir until smooth and pour into a non-stick pan;
  5. On low heat, set the pan with a lid on for 15-16 minutes and it’s ready! Now just transfer to a plate and enjoy!

2. Soluble coffee cake with chocolate

Ingredients

  • 3 eggs
  • 1 cup oil
  • 1 ½ cup caster sugar
  • 1 cup hot water
  • 6 tablespoons instant coffee
  • ¼ cup powdered chocolate 50% cocoa
  • 1 ½ tablespoon baking powder
  • 2 cups wheat flour

Directions

  1. In a bowl, beat the eggs with a pot for 1 minute;
  2. Add the oil and sugar and stir for 2 minutes;
  3. Add the hot water, instant coffee, chocolate powder, baking powder and the first cup of sifted flour;
  4. Mix all together with the whisk and add the second cup of sifted flour;
  5. After stirring for about 1 minute, place on a greased and floured baking sheet;
  6. Bake in preheated oven at 180 degrees for 45 minutes;
  7. Let cool, unmold and serve!

3. Coffee cake with chocolate

Ingredients

  • 3 eggs
  • 1 ½ cup caster sugar
  • 1 cup oil
  • 3 tablespoons chocolate milk
  • 6 tablespoons instant coffee
  • 1 cup hot water
  • 2 ½ cups wheat flour
  • 1 tablespoon baking powder

Directions

  1. Beat the eggs with a whisk, then add the sugar and mix together;
  2. Add the oil, the chocolate, the instant coffee and stir well;
  3. Add the hot water and mix until smooth;
  4. Then add the flour little by little, and lastly the baking powder;
  5. Transfer the dough to a form greased with margarine and chocolate;
  6. Bake in preheated oven at 180 degrees for about 35 to 40 minutes;

4. Coffee cake with cinnamon

Dough ingredients

  • 4 eggs
  • ½ cup oil
  • ¾ cup warm milk
  • 1 ½ cup sugar
  • 3 tablespoons instant coffee
  • 1 ½ cup wheat flour
  • ¼ cup powdered chocolate
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon powder
  • 1 tablespoon baking powder

Topping ingredients

  • 1 can heavy cream without serum
  • 4 tablespoons sugar
  • 3 tablespoons chocolate powder
  • 1 tablespoon instant coffee
  • 1 pinch cinnamon powder

How to prepare the dough

  1. In a blender, place the eggs, oil, milk and sugar. Beat until well mixed;
  2. Add the instant coffee and beat some more. After that, pour into a bowl and add the sifted flour alternating with the powdered chocolate;
  3. Go mixing with a pan delicately and add the baking soda, salt, cinnamon powder and baking powder;
  4. Pour the dough into a greased pan and bake in a preheated oven at 180 degrees for about 40 minutes;
  5. Remove the cake from the oven and wait to cool.

How to prepare the icing

  1. In a saucepan, add the cream, sugar, powdered chocolate, instant coffee and a pinch of cinnamon powder;
  2. Mix all together and place on low fire for about 15 minutes until it acquires the consistency of icing;

Dough ingredients

  • 1 natural yogurt
  • 2 tablespoons granulated instant coffee
  • ½ cup oil
  • 2 eggs
  • 1 cup sugar
  • ½ cup milk
  • 2 cups wheat flour
  • 1 tablespoon baking powder

Topping ingredients

  • 1 box whipping cream mix
  • 2 tablespoons sugar
  • 2 tablespoons walnuts, chestnuts or hazelnuts

How to prepare the dough

  1. In a bowl, place the yogurt and the instant coffee. Stir with the fuête and set aside;
  2. In the mixer, add the oil, the eggs and the sugar. Beat for 5 minutes;
  3. Then add the milk, flour, and coffee-yogurt mixture;
  4. Beat with the fuête and add the yeast. Pour into a greased and floured baking pan;
  5. Bake in preheated oven at 180 degrees for 30 minutes, unmold and let cool.

How to prepare the topping

  1. In the mixer put the whipping cream mixture, sugar and beat well until consistent;
  2. Pour the whipping cream all over the cake and sprinkle the walnuts on top. Now it is ready!

Dough ingredients

  • 3 eggs
  • 2 cups wheat flour
  • 100 ml whole milk
  • 200 ml freshly ground coffee, unsweetened
  • 150 ml oil
  • 1 cup sugar

Topping ingredients

  • ½ box condensed milk
  • ½ box heavy cream
  • ½ tablespoon butter or margarine

  • Cream of Moça Cream Cheese

How to prepare the dough

  1. In a small bowl, beat the eggs with a fork. Then, transfer these beaten eggs to another bowl with the flour;
  2. Add the milk, strained coffee, oil, sugar, and cocoa powder. Stir well until smooth;
  3. Add the yeast, mix and transfer the dough to greased and floured pan;

  1. Dilute the instant coffee in water and set aside;

10. Fluffy coffee cake without wheat, without sugar and butter

Dough ingredients

  • 2 eggs
  • ½ cup coconut oil
  • 1 cup natural low-fat yogurt
  • ½ cup well strained strong coffee
  • 1 tablespoon 100% cocoa powder
  • 1 cup cooking sweetener
  • 1 tablespoon baking powder
  • 2 tablespoons oatmeal

Topping ingredients

  • 100 g plain skimmed yogurt
