1. Banana ice cream

Ingredients

  • 6 chopped ripe bananas
  • 2 boxes heavy cream
  • ½ can of condensed milk
  • ½ cup powdered milk

Directions

  1. In a blender, beat all ingredients for about 2 to 3 minutes;
  2. When the mixture is homogeneous, pour it into a baking dish of your choice;
  3. Take the recipe to the freezer for 3 hours and it’s ready!

2. Banana Jam

Ingredients

  • 4 sliced ripe bananas
  • Coconut oil
  • Cinnamon powder to taste

Directions

  1. In a saucepan, place the coconut oil, banana and cinnamon. Stir gently so that the ingredients are mixed together;
  2. If the bananas you are using are not so ripe, you can add a little water to make them cook more easily. Otherwise, skip this step;
  3. Cover the pan for a few minutes, so that it will cook and caramelize;
  4. Let cook until the mixture reaches the point similar to a chunky puree, or to the point of your preference;
  5. Taste this delight as you wish!

3. Banana Pave

Ingredients

  • 4 ripe mashed bananas
  • 2 boxes heavy cream
  • 400 g dulce de leche
  • Champagne biscuit
  • Milk
  • Cinnamon powder to taste

Directions

  1. In a pan, place the bananas, the cream and the dulce de leche. Mix well until all the ingredients are incorporated;
  2. Take the saucepan to low heat and stir the mixture constantly so as not to lump;
  3. When the mixture begins to bubble, count about 2 minutes and turn off the heat;
  4. In a baking dish of your choice, pour the banana cream in a quantity sufficient to cover the bottom, forming the first layer of the pave;
  5. Moisten the biscuits in the milk and start assembling the second layer with them;
  6. Continue assembling the layers, interspersing the ingredients. Finish with a layer of banana cream;
  7. Refrigerate for about 2 hours;
  8. Sprinkle the cinnamon powder on top of the pave and enjoy!

4. Banana Pudding

Ingredients

  • 1 cup caster sugar
  • 4 ripe bananas cut into slices
  • 4 eggs
  • 2 cups milk
  • Water

Directions

  1. In a pan with a hole in the middle, add the sugar and put it on high heat to melt;
  2. When the sugar is reaching the point of caramel, lower the fire to finish melting the clumps;
  3. When it has reached the desired point, remove from the fire and rub the syrup over the edges of the pan with the help of a spoon or spatula. Set aside;
  4. In a blender, beat the bananas, eggs, and milk for about 4 minutes. Then pour the mixture into the pan with the sugar syrup;
  5. Place the pudding pan into a larger baking pan. Into this baking pan, pour boiling water until it reaches about 1 or 2 inches;
  6. Cover the pudding pan with aluminum foil and bake in a water bath in a preheated oven at 200 degrees for about 55 minutes or until the toothpick test comes out clean;
  7. Place the pudding in the freezer for about 1 to 1 1/2 hours to chill;
  8. Unmold the pudding onto a plate or baking dish;
  9. If there is still syrup left in the pan, heat it with ½ cup water and bring to a boil. Let this syrup cool for a few minutes, pour over the pudding and enjoy this wonderful dessert!

5. Banana cracker

Ingredients

  • 3 ripe mashed bananas
  • 1 and ½ cup caster sugar
  • ½ cup oil
  • 1 egg
  • 1 pinch of salt
  • 2 cups oat flakes
  • 1 tablespoon baking powder
  • 4 and ½ cups flour
  • Crystal sugar
  • Cinnamon powder to taste

Directions

  1. In a large bowl, place the mashed bananas, sugar, oil, egg and salt. Mix well until the ingredients are incorporated;
  2. Add the oats and stir again. Finally, add the yeast and 3 cups of flour. Mix everything together;
  3. Add the remaining flour. The tip for this moment is to add the flour gradually and observe the dough point. It should not be too soft or too dry;
  4. Stir the dough until it reaches a firm and smooth consistency, so that you can shape it with your hands;
  5. Grease your hands with a little oil, take a small piece of dough, and open it on a bench, rolling and stretching. When it has reached the desired size, bring the two ends together and twist the dough 2 or 3 times;
  6. Dip the doughnuts in a mixture with sugar and cinnamon, and place them on a greased baking-pan;
  7. Bake in a preheated oven at 180 degrees for about 30 to 35 minutes and you’re done!

6. Banana dessert

  • 1 cup sugar

  • 200 ml milk
  • 2 tablespoons cornstarch
  • 1 can condensed milk
  • 1 box heavy cream
  • 1 teaspoon vanilla essence
  • 1 tablespoon margarine

Directions

  1. For the syrup, place the sugar in a pan and let it melt completely until it reaches the syrup point;
  2. Add the mashed banana and stir to incorporate it into the sugar syrup;
  3. Over low heat, let the banana cook in the caramel, stirring constantly, until the mixture begins to loosen from the bottom of the pan;
  4. Place the caramel in a baking dish and let cool;
  5. For the cream, dissolve the cornstarch in a bowl of cold milk;
  6. In a saucepan, add the condensed milk, cream, vanilla essence, margarine, and finally the milk with the dissolved starch. Stir well;
  7. Leave the saucepan on low heat and continue stirring the ingredients until a homogeneous cream is obtained;
  8. When the cream begins to bubble, count about 2 minutes and turn off the heat;
  9. With the heat off, continue stirring the cream to cool it;
  10. In a dish, pour all the cream evenly. Then cover the recipe with plastic wrap, leaving it in contact with the cream. Leave to cool completely out of the refrigerator;
  11. With the cream completely cold, spread the banana jam in an even layer;
  12. Take the recipe to the fridge for about 2 hours and it’s ready!

7. Banana chips

  1. With the help of a mandolin, slice the banana;
  2. Grease a baking pan with oil and distribute the banana slices separately, without leaving them overlapping;
  3. Bake in a preheated oven from 160 to 180 degrees for 10 minutes;
  4. With the bananas still warm, remove them from the baking sheet and move to a plate with paper towels;
  5. Let cool and enjoy this delicious dish!

8. Banana vinaigrette

  • 1 ripe banana, diced
  • Juice of 1 lemon

  2. Preheat a pan greased with coconut oil and, with a ladle, pour in a little of the batter;

10. Plantain Moqueca

Ingredients

  • 1 kg of ripe plantains cut in half vertically
  • Juice of 2 lemons
  • 2 cloves crushed garlic
  • 3 onions, sliced
  • 1 red pepper, sliced
  • 1 yellow bell pepper, sliced
  • 5 chopped tomatoes
  • 1 sprig of chopped cilantro
  • 2 tablespoons chopped basil
  • 2 tablespoons chopped parsley
  • 1 cup coconut milk
  • Salt to taste
  • Olive oil to taste
  • Palm oil to taste

Directions

  1. In a large bowl, season bananas with lemon juice, salt and garlic. Let marinate for 1 hour;
  2. In a saucepan, add the olive oil, onion, bell peppers, tomatoes and salt. Stir;
  3. Let ingredients saute until wilted and turn off heat;
  4. Add the cilantro, basil and parsley. Mix together;
  5. In a larger pan, begin assembling the moqueca with a layer of the refogado, followed by a layer of banana and so on, ending with the refogado;
  6. With the layers ready, pour the coconut milk evenly, together with the dendê oil;
  7. Let cook over medium heat for 20 minutes and enjoy!
